Grilled Tri-Tip

This is a great, somewhat spicy, all purpose dry rub. It is especially wonderful on Tri-Tip because Tri-Tip is especially wonderful.

Remember whenever you’re using salt on your meat, put it on right before you grill or at least an hour before. Anything between right away and an hour away will make your meat drier and less tender.

Tri-Tip Dry Rub
Adapted from Allrecipes

1/4 cup smoked paprika
1 Tbs cayenne pepper
2 Tbs freshly ground black pepper
2 Tbs garlic powder
2 Tbs onion powder
3 Tbs salt
1 Tbs dried oregano
1 Tbs dried thyme

In a medium bowl, combine all ingredients. Mix well and store in a cool, dry place in an airtight container. When ready to use, put a little olive oil on the meat and then sprinkle an even layer onto the meat, rubbing it in and lifting the meat to turn it and let any excess dry rub fall off. Let marinate for at least 2 hours, up to 4. Grill according to meat thickness and desired doneness.
