It’s the first day of October and the start of the dinner menu plan completed recently! Tonight we had Turkey & Quinoa Meatloaf, a recipe I’ve featured here before and a favorite of ours. I doubled the recipe and made two extra smaller meatloaves and took one to my grandparents and one will go to Aurelia’s preschool teacher in the morning with a plate of cookies. Protein makes an excellent gift.
With the meatloaf, we had a simple green salad with balsamic vinaigrette, and sauteed zucchini with chives. Easy, healthy, and so tasty!
