Dressed Up and Roasted Broccoli and Bacon

This is a gorgeous side dish. I love the colors, the textures, the flavor explosions. So insanely delicious. Make some meat. Make this dressy broccoli. Eat well!

Dressed Up and Roasted Broccoli and Bacon
Adapted from Nom Nom Paleo

1 head broccoli
3 garlic cloves, minced
4 slices of bacon cut into bite-size pieces
2 Tbs olive oil or coconut oil
1 tsp dried oregano
1 tsp salt
1/2 tsp freshly ground pepper
1/2 cup craisins
1 Tbs aged balsamic vinegar

Preheat the oven to 375 degrees. Line a lipped baking sheet with foil or parchment paper. Cut the broccoli into small florets and chop the stems into small dice. Toss the broccoli, cut up bacon, garlic, oil, oregano, salt and pepper together in a large bowl and pour out onto the prepped baking sheet. Distribute evenly, un-clumping any bacon. Bake in the preheated oven for 35 minutes, stirring after about 20 minutes. Once it’s done, remove from the oven and add the craisins and drizzle on the balsamic. Toss together while hot and serve.
