I haven’t been posting much simply because I just haven’t been cooking terribly exciting things lately. I’m doing a better job keeping to a low sugar, few grains, lots of protein, lots of veg diet during the week and am using the carb cycling excuse to have high carb days on Saturdays when I have my longer distance run. It seems to be more sustainable and I feel good.
Here’s an incredibly easy recipe. Anything with bold flavors, pork, and a slow cooker is going to be good. I put this on big bowls of spinach. Delightful. Delicious.
Pineapple Pork Ribs
Adapted from Paleo Pot
2.5 lbs lean cut, boneless pork ribs, cut into 2″ cubes
3 Tbs dijon mustard
1 – 2 Tbs smoked paprika
2 Tbs honey
2 bell peppers, sliced
1 pineapple, chopped
In the bowl of a slow cooker, mix together the mustard, paprika, and honey. Add the pork and mix well to coat the pork pieces entirely. Add in the peppers and pineapple. Stir to combine. Put the lid on the slow cooker and cook on low for 4-6 hours.
