Great Green Onion Turkey Burgers

Do you ever have a night where you just need something easy and cooked quickly but still want something nourishing and satiating? Last night was such a time. This is a sort of emergency protein meal. Kale is in season now, thank heavens, and ground lean turkey is about the easiest thing to work with. It stays moist without being greasy and will accompany nearly any flavors you give it. Want Mexican Turkey Burgers? Use oregano, coriander, and cumin. Want Greek Turkey Burgers? Use oregano, fennel, garlic, and lemon. Want Indian? Use coriander, cumin, ginger, cinnamon, and a touch of cloves. Top with chutney. Serve any over quick sauteed hearty winter greens. Emergency meals are sometimes the best because it requires less thinking and more cooking.

Great Green Onion Turkey Burgers

Ingredients:
1 1/4 pounds lean ground turkey
1 tsp cumin
1/2 tsp coriander
1/4 tsp crushed red chili
1/2 tsp salt
4 green onions, finely diced
2 cloves garlic, minced
1 Tbs coconut flour
1 egg (or 1/4 cup egg whites)

Instructions:
Preheat a grill or skillet over medium heat. In a large bowl, combine all ingredients and mix very well. Your hands are best, so get them in there. Make four patties out of the turkey mixture and put on the skillet or grill. Cook for 4-6 minutes per side, depending on how thick the patties are, until a meat thermometer reads 165 when inserted into the middle of a patty. Serve over sauteed greens and eat hot.
